RT Dissertation/Thesis T1 Hydrostatic high pressure treatment of casein to generate defined particle and gel structures A1 Merel-Rausch,Eva WP 2007/01/18 AB The focus of the work was to study the influence of pressure treatment conditions on pressure-induced casein structures in detail. The influence of process parameters like pressure build-up, pressure level, holding time and release rate but also temperature, ionic strength and casein concentration were determined. This work showed that the structure formation of casein under high pressure treatment depends on numerous factors. Sols but also gels can be formed and could be used for different applications particularly with the choice of the release rate and the milieu conditions, even if pressure conditions and casein concentration are kept constant.
